Heat oven to 350 degree. Spray a 9x13 pan with cooking spray.
Beat eggos, sugar, applesauce, oil and pumpkin together until smooth. Stir in remaining dry ingredients until combined.
Pour batter into pan and bake until light brown, roughly 30 minutes. Cool.
Beat butter, cream cheese and vanilla until combined. Gradually add in powdered sugar until spreadable consistency.
Spread icing and cut into bars. Refrigerate after serving.
