I have often said that if I were to ever open a restaurant it would be a soup ONLY restaurant. Kind of like the one on Seinfeld, with a little less yelling and a little more kindness. Otherwise nearly identical. I say this because my love for soup strong–I could eat it for every meal–but also because I have a ton of really great soup recipes. In fact, I’d venture to say that my soup recipes are, by far, my best work. I just adore them all.

This is why I decided to gather a few of my favorite to share in one place. I know how it’s sometimes hard to go and scroll or search or use category pages to find what you’re looking for and also know that sometimes you just want exactly what you want, when you want it, with little effort. I get that. I’m the same way. Which is why I love Target.

I digress…

There was this restaurant I used to go to when we lived in Atlanta called Souper Jenny. I believe it’s still around and has, since we left in 2003, opened up a few more locations. This restaurant was only open for lunch and people would line up outside of the door about 30 minutes before they opened. They only offered like 5 soups, 2 sandwiches and a few salads a day. But no one seemed to care. This place was amazing. And it spoke my soup love language.

Since then I’ve never been able to find a good soup restaurant. Apparently, there’s not a market for them around these parts. So, I’m stuck making my own at home and getting creative while doing it.

This list is the culmination of all of my playing and working to create the best recipes for the world’s most perfect dish.   1. The Easiest and Fastest Sausage Soup On Earth–Italian Tortellini Soup: No, this is not the technical name for this soup. But given that it only takes about 20 minutes start to finish and only has 5 ingredients, this soup deserves a name upgrade. It’s so easy and so delicious, I have been making this one for ages, actually since Jeff and I lived in Atlanta. I cannot overstate the ease and efficiency of this soup. Perfect for nights when you don’t want to chop (you only have to rough slice 1 zucchini), don’t feel like standing at the stove for ages, and just want something fast and comforting.   2. The Slow Cooker Wonder–Crockpot Chicken Tortilla Soup: I have always been a fan of the slow cooker. It’s a busy cook’s best friend. Dump the ingredients in the morning and by evening, you’ve got a beautiful home-cooked dinner with zero fuss in your tiredest hour. This Easy Slow Cooker Chicken Tortilla Soup is a crockpot recipe you will make again and again. It’s AMAZING. So much flavor for so little effort it almost seems like a crime. The great thing about this one is that it also is a big recipe, so you’ll for sure have leftovers for a few lunches during the week. It’s a great recipe for busy weeknights when you don’t plan on walking in the door from practices and games until late. You will LOVE it.

  3. The BEST Classic Out There–Homemade Chicken Noodle Soup: When I was a kid, whenever anyone got sick my mom would make her homemade chicken noodle soup. It was a labor of love, starting with a whole chicken (or just chicken breasts) simmering for hours to make stock. Now, when my kids are sick, they have come to ask for the very same soup. It’s a legacy of love I feel honored to pass down. Now here’s the deal. This recipe takes A LONG time. It really does. And sometimes you don’t have a long time, I know. So this is what I do, take two cartons of boxed broth (not low sodium–that won’t taste good) and start from the point after you strain the chicken in the original recipe. It cuts this recipe down to 30 minutes yet produces very similar almost undetectable results. This is a good one for days when you aren’t feeling quite up to par or you have a sick kiddo.   4. The Unexpected Yet Spectacular–Curried Ham and Lenti Soup: This is a recipe my brother created and it’s so wonderfully unexpected and incredible you will be sad you didn’t try it sooner. If you don’t know, my brother is the best chef in our family. It’s a true loss for all involved that he’s not the one behind the keyboard on this blog, but given that he hates social media of any kind and I don’t even think he’s read BurntToast one single time, that is highly unlikely to ever happen. Instead, he just gives me these little gems every once in a while and we all get to fall in love. Ham, lentils and curry powder combine to make an incredibly spicy yet subtle and comforting soup that can be on the table in under 30.   5. For the Veggie Lovers–Pantry Veggie Soup: Every once in a while on a meatless Monday in our house, I’ll still crave soup. That’s where this easy Pantry-Cleaning Veggie Soup comes in. It’s a quick recipe that you can use to clean out the veggie drawer in your fridge and the canned goods in your pantry. It’s hearty enough that no one misses the meat and is filled with fiber and protein from the beans.   6. The Snow Day Favorite–Tomato Basil Soup with Grilled Cheese Croutons: This is a fun twist on the quintessential snow day favorite, tomato soup and grilled cheese. Not from a can and filled with the amazing flavor combo of tomato and basil, this soup is a quick one to throw together on a busy winter night. And the grilled cheese croutons, they take this next level. Sure, you can just make a regular grilled cheese sandwich on regular bread and it will still be one heck of a meal. But take crusty bread, cut tiny squares and drop the croutons in your soup–there’s almost nothing better. My kids LOVE this one because it’s fun. I love it because it’s easy. The Creamy Stick-to-Your Ribs Soup (with Bacon)–Slow Cooker Baked Potato Soup: I wasn’t going to include this recipe when I originally mapped out my favorites, but this one is a sneaky top post on the blog so I figured it deserved a shout out. Not technically my recipe, this is one I have used over the years when it’s super cold outside and my family craves something that warms them from the insides. It’s easy enough to make and a much healthier version of a normally heavy-on-the-fat recipe, this is a great creamy soup for cold winter days. Don’t skimp on the bacon or the scallion tops, though, they add the perfect contrast in flavor and texture and are much needed. Grab the recipe HERE.
