OK. OK. I know that this What I’m Digging Wednesday 7.21 is actually coming to you on Thursday 7.22. I know I’m a day late. I’m so sorry. In my defense, I have been insane these past few weeks with business and I’m just behind. Not that that is a defense, because it’s not. But, still…it’s at least the reason.

Anyway, this list is still good, even if it’s a day late. It certainly isn’t a dollar short (insert cheesy dad joke here). I oddly have two food items on this list, which wasn’t a planned occurrence, but both have served very distinct purposes for me this summer and are worthy of praise and inclusion. I also have a summer skincare hero and my absolute favorite jumpsuit that everyone needs.

  1. Suddenly Salad: In what might be the weirdest item EVER added to a WIDW list, this boxed salad might just also be the most useful. I’ll explain why, but first, let me tell you a story. This past weekend Jeff’s cousin and her son came into town for the first time since COVID. She stayed with us for a very short time, just Friday into Saturday, but somehow we managed to pack in two get-togethers in that short timeframe so that all of the family could get their “Gina time” in. This is all well and good and I love entertaining so it wasn’t a huge deal. Except I was exhausted from working and building out my biz so preparing food was not high on my agenda. Enter in these little boxes of magic, Suddenly Salad. A LONG time ago my friend Lindee told me she makes these for almost every single potluck or cookout she goes to and no one can ever guess it is a boxed mix. So I grabbed myself three boxes (we had a large crowd), added some chopped veggies, and pretended I made it straight from scratch. Y’all, NO ONE KNEW. Now, I know this is mildly dishonest. And in full disclosure, it was a joke and I told everyone at the end. But the point is, if you are pressed for time or hate to cook or just don’t feel like making a fuss, these salads are dead ringers for homemade. I will probably never again for the rest of my days make my own pasta salad. They’re that good. Save this. Bookmark it. Whatever you need to do. Just do yourself a favor and take the easy way on this one. It’s so worth it. Grab yours here OR at your local grocery store.

  2. Skinbetter SPF Compact: So a while back I shared about my facial experience at Grand Spa and also about this product I grabbed when I was there which has been a gamechanger when it comes to my melasma and discoloration. But also along with products that treat dark marks, my aesthetician lectured me about being diligent with SPF. And while I am good about using sunscreen in the morning, it’s those weird times during the day where I am out and about (possibly with makeup on already) and need to reapply some sunscreen on the go that is bothersome to me. Enter in this amazing little compact. It’s a cream, just like a compact foundation, but in what they call “tone smart” shade, which just corrects and blends seamlessly over any skin tone (though I have not tested this to be sure). It is SPF 65, which is amazing and is light enough that it doesn’t feel heavy or greasy on my skin. I use it daily on days when I’m not going to be wearing makeup but still want SPF (casual days) and drop it in my purse or pool bag for days when I might need to touch it up if I’m out and about. It’s a little pricey but I haven’t found a comparable product I like as much so I definitely see it as a worthy investment. Grab yours HERE.

  3. Universal Thread Cropped Linen Jumpsuit from Target: Oh my gosh, can I tell you just how much I love this thing? It’s a one-piece wonder. Light and airy, it’s the perfect thing to throw on after a long day at the beach or pool, but it also is great for those work-at-home days where the only place I’m going is my office up the stairs. It’s comfortable, you’ll feel like you’re not wearing a thing, but yet also on-trend and looks put together enough to travel outside of the house for errands or a girlfriend’s lunch. I LOVE this thing. I love it so much, in fact, that I wear it continually despite Jeff’s eye rolls, questions about when I’ll be painting the next house (he thinks it looks like a painter’s smock), and his overall protestations about how ugly it is. Ladies, if you are all about comfort and love yourself a onesie, run do not walk to your local Target and grab this one. You will not regret it. (Even if your husband or SO does). Grab it HERE.

  4. Ozery Snacking Rounds: I realize it’s weird that I have two food items in one WIDW, but in my defense, I have been holding on to this one since June and just now had a slot to share it. These little rounds have been my breakfast and snack lifesaver during these busy summer months. I grab one each morning, lightly toast it, smother it in peanut butter (because I have a PB problem and have no shame in admitting this) and go about my way. With the texture of a pita, cranberries, orange, and nuts, it’s just flat-out delicious and takes my toast game to the whole next level. They also have smaller snacking rounds that I keep in the fridge and will pop out for a snack on busy days when I’m running afternoon carpool. Just a good yummy breakfast that doesn’t take a ton of time, these little things are available in the bread section of Sprouts or you can grab them from Amazon HERE.
