What I'm Digging Wednesday 6.2

Hey Friends! Welcome to What I’m Digging Wednesday 6.2. In this edition, which is as random as ever, we’ve got a Frisco summertime legend, a puzzle preserver, the guided journal that is bringing intention to my days, and the salty-sour spice blend that I recently realized is new to many of you.

It’s, as always, completely quirky and weird, filled with a bunch of “you didn’t know what you didn’t know” type of new to you things that I’m hoping you’re going to fall in love with.

So without further adieu, here we go…what I'm digging wednesday 6.2

  1. Frisco Snow Cone Lady: A local legend, the Frisco Snow Cone Lady is open for business. If you follow me on Insta (which you should be doing), you know that last year during the height of quarantine lockdown, we had a weekly snow cone lady date with our inlaws because it was one of the few safe outdoor things we could all do together. Plus, my father-in-law is obsessed with snow cones. For nearly 40 years the snow cone lady has been serving up the best frozen treats in town and she’s still going strong. With a ton of flavors to choose from (I try to get a different one each time) and ample space for families to gather and kids to run around, it’s still a weekly date spot for our family and the best place in town to cool off and get your sweet fix at the same time. The Frisco Snow Cone Lady is located at 6427 Elm Street in the heart of downtown Frisco.

  2. Puzzle Mat: Here in Dallas we’ve had what feels like 40 days and 40 nights of rain. And not just rain, really, but downpours of EPIC proportions. This isn’t a gentle mist one can safely walk about in. We’re talking deluge, people, and it’s been nasty and definitely not how we would prefer to start our summer. So, to pass the time indoors and help entice our children to peel their faces away from their screens, we’ve been resorting to lots of old-fashioned entertainment. We’ve watched movies (The Mitchells versus the Machines), played games (Catan), and most recently, we’ve been channeling our inner 80-year-olds and tackling jigsaw puzzles, this one with icons of the 1990s is our current fave. But because puzzles take up a ton of space and we’re not always working on them, we love this puzzle mat. It’s the perfect way to move your puzzle while it’s still in the works without losing any of your hard-fought progress. Easy to use, it’s one of those weird “you don’t know how much you’ve missed it until you have it” type things that if you, like us, are puzzle freaks, will love having. Grab yours HERE.

  3. Tajin: OK. So this is directly related to my latest recipe for Blueberry Mango Salad with Honey Tajin Dressing, and while it could be seen as a shameless plug (it is), it’s also kind of a PSA because I realized after I shared the recipe that the majority of you do not know what Tajin is. *GASP* Y’all. You have been missing out. This tangy blend of chiles, lime, and salt blend hits all of the right notes. It partners perfectly with sweet fruit (thus the salad) but becomes addicting on eggs, avocados, pickles, and pickle-flavored snow cones (see above). For an East Coast native who has a somewhat illicit love affair with Old Bay, this spice blend takes a close second in versatility and flavor. If you have never had it, snag it.   4. Today with Intention Journal: I have always been a fan of journaling. Most of my writing starts with a free-write, by hand, in one of the hundreds of journals I’ve kept over the years. I write my prayers. I write when I’m happy and write when I’m sad. I love journals. But this one that I just snagged from Target is different. It’s a guided journal experience, and while I haven’t been a fan of guided writing in the past, I’ve found that I love ending my day with this one. Two pages a night, one to reflect on the day passed with questions like “How did you take care of yourself today?” and one to set an intention for the day to come, it’s a quick and insightful way to settle my mind and heart for the day. This is a great journal to snag if you are new to journaling but want some way to organize your thoughts at the end of the day or even if you’re an avid journaler but like the idea of trying a new experience.
